Gus’s favorite marinade

Trust me-make this marinade and soak some steak or boneless chicken in it. You will thank me!

This marinade is similar to an adobo marinade with some modifications that I have made over the years to suit our taste more. It truly is one of the most flavorful ones you will have. And the longer you can marinate it, the better! I love to make it at night and soak it overnight and the next day until dinner time. We use the meat to make “Burrito Bowls” and this is probably one of our top 3 favorite meals. SO good!

Gus’s Favorite Marinade

Mix the following ingredients:

  • 5 cloves of minced garlic
  • 1/2 teaspoon salt
  • 2 teaspoons oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon thyme
  • 1/3 cup red wine vinegar
  • 1/3 cup orange juice
  • 1/3 cup lime juice
  • 2 Tablespoons olive oil
  • 1 small can of chipotle peppers in adobo sauce

Place your meat in the marinade and cover. We love ribeyes, flank steak, or chicken…or a combination of both steak and chicken!

After it has marinated, grill the meat and slice. SO delicious! You can eat it with your favorite side or make burrito bowls, our favorite way to use it.

For burrito bowls, I prepare Spanish rice and put it in the bottom of the bowl. Next, I grill or saute’ peppers and onions and layer them on top of the rice. Then I layer the grilled meat and top with queso dip (sometimes I buy pre-made, sometimes I make my own).
